Pat's Lemon Ice Cream
 
4 cups sugar
3/4 fresh lemon juice (about 6-7 lemons)
1 1/2 tsp. lemon extract
2 quarts 2% milk
1 pint cream
 
Add ingredients in above order and freeze.

Chilean Shepherd's Pie

1-2 T Olive Oil
1/2 lb ground turkey
1 small onion
2 T minced garlic
2 T cumin
1/4 t cinnamon
1/4 t allspice
dash of nutmeg
dash of cloves
salt and pepper to taste
1/3 cup (ish) raisins or craisins (optional)
3 medium or 2 large sweet potatoes, peeled
a little milk
1 t garlic powder
salt and pepper

Top with:
Parmesan cheese
dried parsley flakes

Directions:
1. Preheat oven to 400
2. Boil sweet potatoes until fork tender
3. While potatoes boil, heat olive oil in skillet and saute garlic and onion. Add turkey and first 6 spices and cook thoroughly. (At this point, any other fresh or frozen vegetables of your choice, may be added and heated through.) Throw in the raisins and heat for last minute of cooking.
4.Drain and mash sweet potatoes along with milk, garlic powder, and salt and pepper to your liking. Potatoes should be smooth, yet slightly chunky.
5. Layer turkey mixture in the bottom of an 8x8 baking dish, followed by sweet potatoes, and topped with parmesan cheese and parsley flakes. Bake for about 15-20 minutes.

Note: This recipe is very versatile, spices can be added, removed, or changed to whatever you like. Also, don't be afraid to be creative and try adding different veggies. Enjoy!

Thai Peanut Noodle Stir-Fry

This recipe comes straight from allrecipes.com. I've made it twice now and it is definitely going to be a family favorite.  

Ingredients

  • 1 (8 ounce) package uncooked spaghetti
  •  
  • 1 tablespoon cornstarch
  • 1 cup vegetable broth
  • 1/3 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground red pepper
  •  
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup sugar snap peas

Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  2. Meanwhile, whisk the cornstarch into the vegetable broth until dissolved. Whisk in the peanut butter, soy sauce, honey, brown sugar, sesame oil, ground ginger, and red pepper. Bring to a boil over medium-high heat, then reduce heat to medium-low, and simmer until thickened, about 5 minutes. Stir in the sake and keep warm.
  3. Heat the vegetable oil in a large skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the broccoli, carrots, red bell pepper, and sugar snap peas. Reduce heat, cover, and steam until the vegetables are tender, about 5 minutes. Toss the vegetables with the peanut sauce and pasta to serve.

Kinda Homemade Chicken Pot Pie

Chicken Pot Pie


Crust:
1/2 of a 8oz cream cheese
2 sticks of Butter
2 1/4 cups of Flour


Filling:
2 cans of cream of Chicken soup
1 bag of frozen mixed veggies
1-2 chicken breast cooked and shredded or cubed
Salt & Pepper to taste

Mix the crust up and cut in half use half to cover the bottom and sides of an 8x8 glass dish. Cook it for about 20-25 min on 350 then take it out.  Then mix the filling together and pour in the crust top it with the other half of the crust and cook at 400 for about 25-30 min until crust is golden brown.

I'm Married Girls!!

Well it's official... I am a married woman so I need to get on the ball with my blogging! Brett and I have been married for 2 months and 1 day! Crazy! I wanted to share our favorite treat with you guys! Dutch oven! Brett is he king of dutch oven and one of my favorite treats is Cobbler!! It's so simple and easy!

Ingredients:

1 package of cake mix (white or I love Fun Fetti)
1 can of peaches or raspberry pie filling, strawberry - whatever kind of cobbler you want to make
1 can of pop (Shasta raspberry cream makes it taste the best!)

Instructions:

Preheat oven to 350. Line your dutch oven with tin foil.  Pour raspberry pie filling in dutch oven and spread. Pour cake mix on top of filling and spread. Finally pour the can of pop on cake. Stick in the oven and wait for that Delicious smell to fill your whole house. It usually takes about 45 mins to cook. I like to put whipped cream on it or ice cream!

Pumpkin Smoothie


One of my favorite food blogs is Skinnytaste.com. I was craving something pumpkin today, so I got on her website and searched "pumpkin". I couldn't have been more pleased with this smoothie that I resorted to. Here's the link:

Side note: I left out the added brown sugar. It's sweet enough.

Taco a la Beans

We don't have any food in our house right now, so I came up with these tacos that actually turned out really good. Here is the recipe:

1 1/2 cups dried re-fried beans (the kind you get at the cannery)
1 t cumin
1 can black beans
1/2 small onion diced
1 small can green chile peppers
1 clove of garlic, pressed or minced
oil
corn tortillas
salsa
lettuce or cabbage

1. Make re-fried beans according to the can instructions, add cumin.
2. Heat black beans in microwave or over the stove.
3. Heat a little oil in a small skillet. Add onion and garlic and saute for a minute or two. Add chile peppers and      heat through.
4. Heat or fry corn tortillas according to your liking (frying is the best, although not the best for you)
5. Load up tortilla with a little of everything, top with salsa, tomatoes, avocado, lettuce, or whatever you like or have on hand.
6. Eat up!
